Ingredients

  • 2whole fish

  • lemon — sliced

Method

  1. Rinse the 2 whole fish under cold running water to remove any scales or impurities. Pat them dry thoroughly with paper towels to ensure the skin crisps up during cooking. Make three diagonal slashes on each side of the fish to help the seasoning penetrate and to promote even cooking.
  2. In a large skillet or grill pan, heat 2 tablespoons of olive oil over medium-high heat until it shimmers. Add a handful of your chosen herbs, such as thyme or parsley, to the oil. Stir gently for about 30 seconds until the herbs release their aroma, infusing the oil with flavor.
  3. Season the fish generously with fine sea salt and black pepper, ensuring the seasoning gets into the slashes. Place the fish in the hot pan, laying them away from you to avoid splatters. Cook for about 3-4 minutes on each side, or until the skin is golden brown and the flesh is just opaque near the bone.
