  2. In a large skillet or grill pan, heat 1 tbsp of oil over medium-high heat. Once the oil shimmers, place the chicken thighs skin-side down in the pan. Cook them until the skin is golden brown and crispy, about 5-7 minutes. The chicken should release easily from the pan when ready to flip.
