Ingredients

Method

  1. Begin by patting the 800 g of chicken thighs dry with paper towels to remove any excess moisture. This step ensures that the chicken will brown nicely. Season the chicken generously with fine sea salt and black pepper, then rub in 1 tsp of paprika evenly over all the pieces. This will give the chicken a vibrant color and a hint of smokiness.
  2. Heat 1 tbsp of oil in a large skillet over medium-high heat. Once the oil is shimmering, place the chicken thighs skin-side down in the skillet. Allow them to brown without moving them for about 4 to 5 minutes, until the skin is golden and crisp. Flip the thighs and cook the other side until browned as well. The skin should be crispy and the meat should have a rich, deep color.
  3. Remove the chicken from the skillet and set aside on a plate. In the same skillet, add 2 tbsp of yogurt. Stir it around to pick up the browned bits from the pan, which will add depth to the sauce. Let the yogurt cook for a minute or two until it begins to bubble and slightly thicken, infusing the flavors from the chicken.
  4. Return the chicken thighs to the skillet, nestling them into the yogurt sauce. Lower the heat to medium and let the chicken simmer gently. This will allow the flavors to meld and the chicken to cook through. The meat should feel firm to the touch and the juices should run clear when pierced with a knife.
  5. If the sauce seems too thin, let it reduce by simmering a bit longer until it reaches your desired consistency. Taste the sauce and adjust the seasoning with more salt if necessary. The sauce should be creamy and well-seasoned, complementing the savory chicken.
