Ingredients

  • 800 glamb cubes
  • 2onions
  • 2tomatoes
  • 2 tbspoil
  • 1 tsppaprika

Method

  1. Begin by seasoning the 800 g of lamb cubes with a generous sprinkle of fine sea salt and 1 tsp of paprika. Ensure each piece is evenly coated by tossing the lamb in a large bowl. This step infuses the meat with flavor from the start, crucial for a rich stew.
  2. In a large, heavy-bottomed pot or Dutch oven, heat 2 tbsp of oil over medium-high heat. Once the oil is shimmering, add the seasoned lamb cubes in a single layer, ensuring not to overcrowd the pot. Brown the lamb on all sides until each piece develops a deep, golden-brown crust. This caramelization adds depth and complexity to the stew.
  3. While the lamb is browning, finely chop 2 onions and 2 tomatoes. Once the lamb is browned, remove it from the pot and set it aside. Add the chopped onions to the same pot, using the residual oil and lamb drippings to sauté them until they become translucent and fragrant, which will take about 3-4 minutes.
  4. Add the chopped tomatoes to the onions, stirring to combine. Cook until the tomatoes break down and meld with the onions, forming a thick, aromatic base. This mixture should be soft and slightly saucy, enhancing the stew's flavor.
  5. Return the browned lamb cubes to the pot, nestling them into the onion and tomato mixture. Add enough water to just cover the meat, then bring the pot to a gentle simmer. Cover the pot with a lid, reducing the heat to low, and allow the stew to braise slowly. The lamb is ready when it is tender and can be easily pierced with a fork, which indicates it has absorbed the flavors.
  6. Once the lamb is tender, taste the stew and adjust the seasoning with additional salt and black pepper as needed. The flavors should be balanced and robust, with the lamb being the star. Serve the stew hot, accompanied by rice, bread, or a fresh salad, inviting everyone to share in this hearty Caribbean meal.
