Ingredients

  • 800 glamb cubes
  • 2onions
  • 2tomatoes
  • 2 tbspoil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning the 800 g of lamb cubes generously with fine sea salt and freshly ground black pepper. Add 1 tsp of paprika, ensuring each piece is evenly coated. This step infuses the lamb with flavor and prepares it for browning.
  2. In a large, heavy-bottomed pot or Dutch oven, heat 2 tbsp of oil over medium-high heat. Once the oil shimmers, add the seasoned lamb cubes in a single layer, avoiding overcrowding. Brown the lamb on all sides until it develops a deep, rich color, which should take a few minutes per side. This browning step is crucial for building flavor in the stew.
  3. Once all the lamb cubes are browned, remove them from the pot and set aside. In the same pot, add 2 finely chopped onions. Sauté the onions in the remaining oil and lamb drippings over medium heat until they turn translucent and begin to caramelize, releasing a sweet aroma.
  4. Add 2 chopped tomatoes to the pot with the onions. Stir and cook until the tomatoes break down and meld with the onions, forming a fragrant base. This mixture should be soft and slightly thickened, which will add depth to the stew's flavor.
  5. Return the browned lamb cubes to the pot, nestling them into the onion and tomato mixture. Pour in enough water to just cover the lamb, and bring the mixture to a gentle simmer. Cover the pot and let the stew braise on low heat until the lamb is tender, which can be identified by the meat easily pulling apart with a fork.
  6. Taste the stew and adjust the seasoning with additional salt and black pepper if necessary. Serve the Caribbean Lamb Stew hot, accompanied by rice, bread, or a fresh salad, allowing the rich flavors to shine in a communal setting.
