Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Rinse the 300 g of brown lentils under cold running water to remove any impurities, then set them aside to drain. Dice the onion and tomatoes into small, even pieces to ensure they cook evenly. Season the diced tomatoes with a pinch of fine sea salt and black pepper, allowing the flavors to meld while you prepare the other ingredients.
  2. In a large, heavy-bottomed pot, heat 2 tablespoons of oil over medium heat. Add the diced onion and sauté gently, stirring occasionally, until the onion becomes translucent and soft, releasing its sweet aroma. This should take about 5 to 7 minutes, and the onion should not brown.
  3. Add 1 teaspoon of cumin to the softened onions, stirring continuously for about a minute until the cumin releases its warm, earthy fragrance. This step enhances the flavor base of the dish, ensuring the spices are well-integrated.
  4. Stir in the seasoned tomatoes, allowing them to cook down until they start to break apart and form a thick, rich sauce. This will take a few minutes, and you'll notice the tomatoes have released their juices and deepened in color.
  5. Add the rinsed lentils to the pot, stirring them into the tomato-onion mixture until they are well-coated with the flavors. Pour in enough water to cover the lentils by about an inch, then bring the mixture to a gentle simmer.
  6. Reduce the heat to low, cover the pot, and let the lentils cook slowly until they are tender but still hold their shape, stirring occasionally. This process allows the lentils to absorb the flavors of the sauce, resulting in a cohesive dish.
  7. Once the lentils are tender, taste the dish and adjust the seasoning with additional fine sea salt and black pepper as needed. The lentils should be flavorful and well-seasoned, with a slight bite to them.
