Ingredients

  • 300 gbrown lentils

Method

  1. Rinse 300 g of brown lentils under cold water until the water runs clear. This helps remove any dust or debris and ensures a clean taste. Set them aside to drain while you prepare the vegetables.
  2. Dice 1 onion and 2 tomatoes into small, even pieces. This will ensure they cook evenly and contribute to a balanced flavor throughout the dish. Season the chopped vegetables with a pinch of fine sea salt and black pepper to taste, which will help draw out their natural flavors.
  3. In a large saucepan, heat 2 tbsp of oil over medium heat. Once the oil shimmers, add the diced onion. Cook the onion slowly, stirring occasionally, until it becomes translucent and soft, which should take about 5-7 minutes. This slow cooking releases the onion's sweetness, forming the base of the dish.
  4. Add 1 tsp of cumin to the softened onions, stirring for about a minute until the cumin becomes fragrant. This step blooms the spice, enhancing its flavor and integrating it into the dish.
  5. Stir in the diced tomatoes and cook until they begin to break down and form a sauce, which should take about 5 minutes. The tomatoes should soften and release their juices, creating a rich base for the lentils.
  6. Add the rinsed lentils to the saucepan, stirring to combine them with the onion-tomato mixture. Pour in enough water to cover the lentils by about 2 cm. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pan and let the lentils cook until they are tender but not mushy, which should take about 25-30 minutes. The lentils should hold their shape but be soft to the bite.
  7. Once the lentils are cooked to the desired texture, taste and adjust the seasoning with more fine sea salt and black pepper if needed. The dish should be well-balanced, with the warmth of the cumin and the sweetness of the tomatoes complementing the earthy lentils.
