  1. Begin by ensuring the 600 g of squid rings are thoroughly cleaned. Rinse them under cold water to remove any grit or residue, then pat them dry with a clean kitchen towel. This step is crucial to remove excess moisture, which helps achieve a good sear later.
  2. Peel and finely mince the 4 cloves of garlic. In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the minced garlic and a pinch of chili to taste. Stir continuously for about 30 seconds until the garlic becomes fragrant and lightly golden, being careful not to let it burn.
  3. Add the squid rings to the skillet in a single layer, ensuring they have enough space to cook evenly. Stir them gently with a spatula, cooking for about 2-3 minutes. You'll know they're done when they turn opaque and firm to the touch, but still tender.
