Ingredients

  • 600 gsquid rings

Method

  1. Begin by ensuring the 600 g of squid rings are thoroughly cleaned. Rinse them under cold running water to remove any grit or residue, then pat them dry with a clean kitchen towel. This step is crucial to prevent excess moisture from interfering with the stir-frying process, which could lead to steaming instead of frying.
  2. Peel and finely chop the 4 cloves of garlic. In a large, heavy-bottomed skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the chopped garlic, stirring constantly. Cook until the garlic becomes golden and releases its aroma, which indicates that the base of aromatics is ready.
  3. Add the squid rings to the skillet, spreading them out in a single layer if possible. Stir them gently to coat with the garlic-infused oil. Cook the squid just until it turns opaque and firm to the touch, which should happen quickly. This ensures the squid remains tender and not rubbery.
  4. Sprinkle chili to taste over the squid, stirring to combine. Squeeze the juice of one lemon over the dish, allowing the acidity to brighten the flavors. Taste a piece of squid and adjust with fine sea salt to taste, enhancing the natural flavors without overpowering them.
