Ingredients

Method

  1. Start by preparing the vegetables. Slice 1 eggplant and 2 zucchini into even, thin rounds, about 1/4 inch thick. Slice 2 tomatoes into slightly thicker rounds to prevent them from breaking down too quickly during cooking. Place the sliced vegetables in a large bowl, drizzle with 80 ml of olive oil, and season generously with fine sea salt and black pepper. Toss everything together until the vegetables are well coated with oil and seasoning.
  2. Select a large, heavy-bottomed skillet or sauté pan that can accommodate all the vegetables comfortably. Heat the pan over medium heat and add a splash of olive oil. Once the oil is shimmering, add a finely chopped onion and cook gently until the onion becomes soft and translucent, stirring occasionally to prevent browning.
  3. Add the seasoned eggplant slices to the pan first, arranging them in a single layer if possible. Allow them to cook for a few minutes until they begin to soften and take on a golden hue. This step ensures the eggplant absorbs the flavors and becomes tender, which is crucial for the final texture of the bake.
  4. Layer the zucchini slices over the eggplant, followed by the tomato slices. Sprinkle your choice of herbs over the top, such as thyme or oregano, to infuse the dish with aromatic flavors. Cover the pan with a lid to trap steam, which will help the vegetables cook evenly and meld together.
