Chinese Beef Pot 2

Chinese Beef Pot 2 is a staple in home kitchens across China, where it's crafted with an instinctive touch. This dish represents the everyday culinary practices of Chinese families, where salt is judged by hand and fat is used with a generous spirit. It's a dish that finds its way to the table on weekdays, when simplicity and comfort are the goals, providing warmth and sustenance to all who gather around.

The result is a hearty, rich stew with tender beef cubes, softened carrots, and onions that have melded into the broth. The flavors are straightforward yet deeply satisfying, with a seasoning of fine sea salt and black pepper that enhances without overpowering. It's a dish that invites you to savor each mouthful, celebrating the essence of home-cooked goodness.

Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and black pepper to taste. Toss the cubes in a large bowl, ensuring each piece is evenly coated with the seasoning. This step enhances the beef's natural flavors and prepares it for browning.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil shimmers, add the seasoned beef cubes in a single layer, making sure not to overcrowd the pot. Brown the beef on all sides until each piece has a deep, rich color. This should create a flavorful crust on the beef, which is essential for the dish's depth of flavor.
  3. While the beef is browning, peel and slice 2 carrots into thick rounds and chop 1 onion into large chunks. These vegetables will add sweetness and aroma to the dish, balancing the savory beef.
  4. Once the beef is well-browned, remove it from the pot and set aside. In the same pot, add the chopped onion and carrot slices. Sauté them over medium heat until the onion becomes translucent and the carrots start to soften, releasing their natural sweetness.
  5. Return the browned beef cubes to the pot with the vegetables. Pour in 500 ml of water, ensuring the beef and vegetables are just submerged. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid and let it braise slowly. The beef is done when it is tender and easily pierced with a fork, and the liquid has reduced slightly, intensifying the flavors.
  6. Taste the braised beef and vegetables, adjusting the seasoning with more salt and black pepper if necessary. The dish should have a balanced savory flavor with a hint of sweetness from the carrots and onions.
  7. Serve the Chinese Beef Pot 2 hot, accompanied by steamed rice, crusty bread, or a fresh salad. This dish is meant to be shared, embodying the communal spirit of Chinese home cooking.
