Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers

Method

  1. Begin by placing 800 g of beef cubes in a large mixing bowl. Sprinkle them with 1 tsp of cumin, a generous pinch of fine sea salt, and a few grinds of black pepper. Toss the beef cubes to ensure each piece is evenly coated with the seasonings. This step helps infuse the beef with flavor before cooking.
  2. Peel and finely chop 1 onion. In a large skillet or wok, heat 2 tbsp of oil over medium-high heat until it shimmers. Add the chopped onion and sauté until it turns translucent and begins to caramelize, which will add a sweet depth to the dish.
  3. Increase the heat to high, then add the seasoned beef cubes to the skillet in a single layer. Allow them to brown without stirring for a few minutes until a deep, rich color forms on one side. Flip the cubes to brown the other side, ensuring all sides develop a good sear, which locks in juices and enhances flavor.
  4. If using a grill, preheat it to medium-high. Thread the browned beef cubes onto skewers, leaving a little space between each piece to ensure even cooking. Place the skewers on the grill, turning occasionally, until the beef is cooked through and tender. If braising, add a splash of water to the skillet, cover, and reduce the heat to low, simmering until the beef is tender and the liquid is mostly absorbed.
  5. Once the beef is tender, remove the skewers from the grill or the beef from the skillet. Taste a piece and adjust the seasoning with more fine sea salt or black pepper if needed. Serve the skewers hot, accompanied by rice, bread, or a fresh salad for a complete meal.
