Ingredients

Method

  1. Begin by placing the 800 g beef cubes in a large mixing bowl. Season them generously with fine sea salt and 1 tsp cumin, ensuring each piece is well-coated. Add freshly ground black pepper to taste, tossing the beef cubes to evenly distribute the spices. Let the seasoned beef sit for about 10 minutes to allow the flavors to penetrate the meat.
  2. While the beef is marinating, peel and slice 1 onion into thin rings. Set aside. This will add a subtle sweetness and aroma to the dish as it cooks.
  3. Heat 2 tbsp oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the beef cubes in a single layer, ensuring not to overcrowd the pan. Brown the beef on all sides, turning occasionally, until each piece has a deep, rich color and a slightly crispy exterior. This should take about 5-7 minutes per batch, depending on the size of your pan.
  4. Remove the browned beef cubes from the skillet and set them aside on a plate. In the same skillet, add the sliced onions. Sauté them until they become soft and translucent, absorbing the flavorful bits left in the pan from the beef.
  5. Return the beef cubes to the skillet with the onions. If using skewers, thread the beef and onion alternately onto the skewers. If not, simply mix them together in the skillet. Lower the heat to medium and cover the skillet with a lid. Allow the beef to braise gently, stirring occasionally, until it becomes tender and the onions are caramelized, about 15-20 minutes.
  6. Once the beef is tender, taste a piece for seasoning. Adjust with additional salt or pepper if necessary. The beef should be juicy and flavorful, with a slight hint of cumin and the sweetness of the onions.
