Ingredients

Method

  1. Start by rinsing 400 g of chickpeas under cold water and set them aside to drain. Dice 1 onion and 2 tomatoes into small, even pieces to ensure they cook evenly. Measure out 1 tsp of cumin and have fine sea salt and black pepper ready for seasoning. This preparation will help you move smoothly through the cooking process.
  2. In a large, heavy-bottomed pan, heat 2 tbsp of oil over medium heat until it shimmers. Add the diced onion to the pan and stir occasionally, cooking until the onion becomes translucent and soft, releasing a sweet aroma. This process should take a few minutes as the onion forms the base of the curry.
  3. Add the cumin to the softened onions, stirring well to coat the onions with the spice. Cook for another minute until the cumin becomes fragrant, enhancing the base with its earthy aroma.
