Method

  1. Rinse the 2 whole fish under cold running water to remove any scales or debris. Pat them dry thoroughly with paper towels, ensuring the skin is dry to achieve a crisp texture when cooked.
  2. In a large skillet or grill pan, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add a handful of your chosen herbs, such as cilantro or parsley, to infuse the oil with their aroma. This step enhances the flavor of the fish.
  3. Season the fish generously with fine sea salt and black pepper on both sides. Lay the fish in the pan, ensuring they fit comfortably without overlapping. Cook for about 3-4 minutes on one side until the skin is golden brown and the fish begins to release easily from the pan.
  4. Carefully flip the fish using a spatula and cook the other side. The fish is done when the flesh is just opaque and flakes easily with a fork. This indicates that the fish is cooked through but still moist.
