Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by rinsing 300 g of brown lentils under cold water until the water runs clear. This removes any dust or debris and ensures a clean taste. Dice 1 onion finely and chop 2 tomatoes into small cubes, keeping them separate for now. Measure out 1 tsp of cumin and have fine sea salt and black pepper ready for seasoning.
  2. In a large saucepan or deep skillet, heat 2 tbsp of oil over medium heat. Once the oil is shimmering, add the diced onion. Stir occasionally and cook until the onion becomes translucent and soft, releasing a sweet aroma, about 5-7 minutes.
  3. Add the chopped tomatoes to the softened onions. Stir them in and sprinkle 1 tsp of cumin over the mixture. Cook until the tomatoes break down and meld with the onions, creating a fragrant and slightly thickened base, about 5 minutes. This step builds the foundation of flavors for the dish.
  4. Add the rinsed lentils to the pan, stirring them into the onion and tomato mixture. Pour in enough water to cover the lentils by about 2 cm. Bring the mixture to a gentle simmer, adjusting the heat as necessary to maintain a low bubble. Cover the pan and let the lentils cook, stirring occasionally, until they are tender and have absorbed most of the liquid, about 25-30 minutes. The lentils should be soft but still hold their shape.
  5. Once the lentils are cooked to the desired tenderness, taste and season with fine sea salt and black pepper to your preference. Stir well to ensure the seasoning is evenly distributed. The dish should have a balanced flavor with a hint of cumin and a slight sweetness from the onions and tomatoes.
  6. Serve the Chinese Lentil Bowl 2 warm, ideally in a communal dish for sharing. The lentils should be creamy, with a rich, savory aroma, and the tomatoes should have dissolved into a luscious sauce that coats each lentil.
