Ingredients

  • 600 gshrimp

Method

  1. Begin by cleaning the shrimp. Peel and devein 600 g of shrimp, ensuring all shells and veins are removed. Rinse them under cold water and pat dry with paper towels to remove excess moisture. This ensures the shrimp will sear properly and not steam in the pan.
  2. Peel and finely mince 4 cloves of garlic. In a large, heavy-bottomed skillet or wok, heat 80 ml of olive oil over medium heat. Once the oil shimmers, add the minced garlic. Stir continuously until the garlic becomes golden and fragrant, taking care not to let it burn, as this will impart a bitter taste.
  3. Increase the heat to medium-high and add the prepared shrimp to the skillet. Spread them out in a single layer to ensure even cooking. Cook the shrimp for about 1-2 minutes on each side, or until they turn pink and just opaque. The shrimp should be firm to the touch but not rubbery, indicating they are perfectly cooked.
  4. Remove the skillet from the heat and immediately squeeze the juice of one lemon over the shrimp. Add chili to taste, adjusting the amount based on your preference for heat. Sprinkle with fine sea salt, starting with a small pinch and adding more as needed after tasting.
  5. Transfer the shrimp to a serving platter, ensuring they are evenly coated with the aromatic oil and lemon juice. Serve immediately while the shrimp are still warm, allowing everyone to enjoy the dish at its peak flavor.
