Ingredients

  2. Peel and finely chop the 4 cloves of garlic. This will allow the garlic to release its full flavor quickly when it hits the hot oil.
  3. In a large wok or a deep frying pan, heat 2 tbsp of oil over medium-high heat. Once the oil shimmers, add the chopped garlic and stir-fry for about 30 seconds until it becomes fragrant and lightly golden, taking care not to let it burn.
  4. Add the squid rings to the pan in a single layer. Stir-fry them briskly, ensuring they are all in contact with the hot surface. Cook until the squid turns just opaque and curls slightly, indicating it's cooked through but still tender. This should take about 1 to 2 minutes.
  5. Sprinkle chili to taste over the squid, stirring to distribute the heat evenly. Squeeze the juice of one lemon over the dish, tossing everything to combine and enhance the flavors with a fresh, zesty note.
  6. Taste a piece of squid and adjust with fine sea salt as needed, ensuring the seasoning is balanced. Serve the stir-fry immediately while it's hot and aromatic, perfect for sharing around the table.
