Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning 800 g of beef cubes generously with fine sea salt and freshly ground black pepper. Toss the cubes in a large bowl to ensure each piece is evenly coated. This step enhances the flavor of the beef and helps to tenderize it.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil shimmers, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides, turning occasionally, until each piece has developed a deep, rich color. This should take about 5-7 minutes per batch, and it is crucial for building flavor.
  3. While the beef is browning, peel and slice 2 carrots into thick rounds and dice 1 onion. Once the beef is browned, remove it from the pot and set aside. Add the onions to the same pot, using the residual oil and beef drippings to sauté them until they become translucent and fragrant, about 5 minutes.
  4. Add the sliced carrots to the pot with the onions and stir well to combine. Cook for an additional 3 minutes, allowing the carrots to begin softening and absorbing the flavors from the pot.
  5. Return the browned beef cubes to the pot, along with any juices that have accumulated. Pour in 500 ml of water, ensuring the beef and vegetables are mostly submerged. Bring the mixture to a gentle simmer over medium heat.
  6. Cover the pot with a lid and reduce the heat to low. Allow the beef to braise gently for about 1.5 to 2 hours, or until the meat is tender and easily pierced with a fork. The liquid should reduce slightly and develop a rich, beefy aroma.
  7. Once the beef is tender, taste the broth and adjust the seasoning with more salt and black pepper if necessary. Serve the Colombian Beef Pot hot, accompanied by rice, bread, or a fresh salad, perfect for soaking up the flavorful sauce.
