The dish is a vibrant blend of tender white fish, softened onions, and ripe tomatoes, all infused with the golden hue of turmeric. Ingredients

  • 700 gfirm white fish
  • 1onion
  • 2tomatoes
  • 80 mloil
  • 1 tspturmeric
  • to tastefine sea salt and black pepper

Method

  1. Start by cleaning the 700 g of firm white fish. Rinse it under cold water and pat dry with paper towels. Cut the fish into large chunks, about 2-inch pieces, to ensure they hold together during cooking. Set aside.
  2. Peel and finely chop 1 onion. Dice 2 tomatoes into small cubes. In a large, deep skillet or wide pot, heat 80 ml of oil over medium heat. Once the oil is shimmering, add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and soft, about 3-4 minutes.
  3. Add the diced tomatoes to the skillet with the onions. Stir in 1 teaspoon of turmeric, ensuring the mixture is well combined. Cook until the tomatoes break down and the mixture becomes a thick, fragrant paste, about 5-7 minutes. This forms the aromatic base of your curry.
  4. Gently add the fish chunks to the skillet, nestling them into the tomato and onion mixture. Season with fine sea salt and black pepper to taste. Cover the skillet with a lid and allow the fish to cook, stirring gently once or twice, until the fish is just opaque and flakes easily with a fork, about 5-8 minutes. The fish should be tender and infused with the flavors of the curry.
  5. Taste the curry and adjust the seasoning with more salt if needed. Serve immediately, ensuring each portion has a generous amount of the aromatic sauce. This dish is best enjoyed with family, capturing the essence of Colombian home cooking.
