Colombian Fish Curry

Ingredients

  • 700 gfirm white fish
  • 1onion
  • 2tomatoes
  • 80 mloil
  • 1 tspturmeric
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing the fish. Rinse 700 g of firm white fish under cold water and pat it dry with paper towels. Cut the fish into large chunks, about 5 cm each, to ensure they hold together during cooking. Set aside on a plate.
  2. Peel and finely chop 1 onion, then dice 2 tomatoes. In a large, deep skillet or wide pot, heat 80 ml of oil over medium heat. Once the oil is shimmering, add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and soft, about 5 minutes.
  3. Add the diced tomatoes to the skillet with the onion. Stir in 1 teaspoon of turmeric, ensuring the spices coat the vegetables evenly. Cook until the tomatoes have broken down and the mixture is thick and fragrant, with the oil beginning to separate from the tomatoes.
  4. Gently place the fish chunks into the skillet, nestling them into the aromatic tomato mixture. Season with fine sea salt and black pepper to taste. Cover the skillet with a lid and reduce the heat to low.
  5. Cook the fish until it is just opaque and flakes easily with a fork, which should take about 5 to 7 minutes. The fish should be tender and infused with the curry flavors, with the sauce slightly thickened around it.
  6. Taste the curry and adjust the seasoning with more salt if needed. Serve immediately, ensuring each portion has a generous amount of sauce and fish, perfect for sharing at the table.
