Ingredients

Method

  1. Begin by cleaning the 2 whole fish thoroughly under cold running water, removing any scales and innards. Pat them dry with paper towels to ensure a good sear and prevent sticking during cooking. Make three diagonal slashes on each side of the fish to allow flavors to penetrate.
  2. In a large skillet or grill pan, pour 2 tablespoons of olive oil and heat over medium-high heat. Once the oil is shimmering, add a handful of fresh herbs such as cilantro or parsley, and the zest of one lemon. Stir gently until the herbs release their aroma, infusing the oil with their fragrance.
  3. Season the fish generously with fine sea salt and black pepper, rubbing it into the slashes and cavity. Carefully place the fish into the pan, making sure not to overcrowd. Cook the fish for about 4-5 minutes on each side, or until the flesh turns from translucent to opaque and flakes easily when tested with a fork.
  4. Squeeze the juice of a lemon over the fish, allowing the acidity to balance the richness of the oil. Taste a small piece of the fish to check for seasoning, adding more salt if necessary.
