Ingredients

  • 600 gshrimp
  • 4 clovesgarlic

Method

  1. Start by cleaning the shrimp. Rinse 600 g of shrimp under cold running water and remove any shells or veins. Pat them dry with a paper towel to ensure they will sear properly in the pan.
  2. Peel and finely mince 4 cloves of garlic. In a large, heavy-bottomed skillet, heat 80 ml of olive oil over medium heat. Add the minced garlic to the oil, stirring gently until the garlic becomes golden and releases its aroma, taking care not to let it burn.
  3. Once the garlic is fragrant, add the shrimp to the skillet in a single layer. Increase the heat to medium-high. Cook the shrimp for about 2 to 3 minutes on one side until they start to turn pink and opaque around the edges.
  4. Flip the shrimp over and continue cooking for another 1 to 2 minutes. The shrimp should be fully opaque and pink, with a slight curl, indicating they are perfectly cooked. Avoid overcooking to maintain their tender texture.
  5. Remove the skillet from heat and immediately squeeze the juice of one lemon over the shrimp. Add chili to taste, adjusting the heat level to your preference. Sprinkle fine sea salt to taste, ensuring the flavors are balanced.
  6. Serve the shrimp immediately, while they are hot and juicy, allowing everyone to enjoy the dish at its freshest. This dish is meant to be shared, embodying the spirit of Colombian home cooking.
