Colombian Shrimp Pan

Colombian Shrimp Pan is a beloved dish found on home tables across Colombia. It's a simple yet flavorful preparation where shrimp is generously seasoned and cooked with garlic and olive oil, bringing out the natural sweetness of the seafood. The addition of lemon juice and chili gives it a zesty kick, making it a delightful dish to share.

This dish captures the essence of Colombian home cooking, where ingredients are measured by instinct and taste, rather than precision. The shrimp is the star, enhanced by the warmth of garlic and the brightness of lemon, creating a savory and satisfying experience that invites everyone to gather around the table.

Ingredients

  • 600 gshrimp
  • 4 clovesgarlic
  • 80 mlolive oil
  • lemonjuiced
  • to tastechili
  • to tastefine sea salt

Method

  1. Start by cleaning the 600 g of shrimp. Peel and devein them, ensuring all shells and veins are removed. Rinse under cold water and pat dry with a paper towel. This ensures the shrimp will cook evenly and absorb the flavors well.
  2. In a large skillet, heat 80 ml of olive oil over medium heat. Crush 4 cloves of garlic and add them to the pan. Stir gently until the garlic becomes golden and fragrant, which should take about 2-3 minutes. This step infuses the oil with garlic flavor, creating a rich base for the shrimp.
  3. Add the cleaned shrimp to the skillet in a single layer. Increase the heat to medium-high and cook for about 2 minutes on one side. Look for the shrimp to turn pink and start curling slightly at the edges.
  4. Flip the shrimp over and squeeze the juice of one lemon over them. Sprinkle with chili to taste, adjusting the amount based on your preference for heat. Cook for another 1-2 minutes, or until the shrimp are just opaque and firm to the touch.
  5. Remove the skillet from heat and taste a piece of shrimp. Add fine sea salt to taste, mixing gently to ensure even seasoning. Serve immediately, allowing the vibrant flavors to shine while the shrimp are still warm.
