Ingredients

  • 600 gsquid rings

Method

  1. Start by ensuring the 600 g of squid rings are thoroughly cleaned under cold running water. Pat them dry with a clean kitchen towel to remove excess moisture. This step is crucial to prevent the squid from steaming instead of searing when cooked.
  2. Peel and finely mince 4 cloves of garlic. In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the minced garlic and a pinch of chili to taste. Stir continuously for about 1-2 minutes until the garlic is golden and aromatic, being careful not to let it burn.
  3. Add the squid rings to the skillet in a single layer. Stir-fry them quickly, ensuring each ring makes contact with the hot pan. Cook the squid just until it turns opaque and curls slightly, which should take about 2-3 minutes. This indicates that the squid is tender and perfectly cooked.
  4. Remove the skillet from heat and immediately squeeze the juice of one lemon over the squid. Toss everything in the pan to coat the squid evenly with the lemon juice, which will enhance the fresh flavor of the seafood.
