Eastern European Bean Stew

Ingredients

  • 400 gdried beans — soaked
  • 1onion
  • 2 tbsptomato paste
  • 80 mloil
  • to tastefine sea salt and black pepper

Method

  1. Start by soaking 400 g of dried beans in a large bowl of water overnight. This will help soften the beans and reduce cooking time. The next day, drain and rinse the beans thoroughly under cold water to remove any impurities.
  2. Finely chop 1 onion and set it aside. In a large pot or Dutch oven, heat 80 ml of oil over medium heat. Once the oil is shimmering, add the chopped onion and cook gently, stirring occasionally, until the onion becomes translucent and soft, which should take about 10 minutes. This slow cooking releases the onion's sweetness, forming a flavorful base for the stew.
  3. Add 2 tbsp of tomato paste to the softened onions. Stir the mixture continuously for a couple of minutes until the tomato paste darkens slightly in color and its aroma becomes rich and fragrant. This step enhances the depth of flavor in the stew.
  4. Add the soaked and drained beans to the pot, stirring them into the onion and tomato mixture until well coated. Pour in enough water to cover the beans by about 2 inches. Bring the mixture to a gentle simmer over medium heat.
  5. Once simmering, reduce the heat to low and cover the pot partially with a lid. Allow the beans to cook slowly, stirring occasionally, until they are tender and creamy in texture. This can take anywhere from 1 to 2 hours, depending on the type of beans used. The beans should be soft but not mushy, holding their shape while being easy to mash with a fork.
  6. Season the stew with fine sea salt and black pepper to taste. Stir well and taste again, adjusting the seasoning if necessary. The stew should be well-balanced, with the salt enhancing the natural flavors of the beans and the richness of the tomato and onion base.
  7. Once the stew reaches the desired consistency and flavor, remove it from the heat. Let it sit for a few minutes before serving, allowing the flavors to meld together. Serve the Eastern European Bean Stew warm, ideally with crusty bread or a side of sour cream, and enjoy this hearty dish with family and friends.
