Ingredients

  • 800 gbeef cubes
  • 2carrots

  • 500 mlwater

Method

  1. Begin by seasoning the 800 g of beef cubes with fine sea salt and black pepper to taste. Ensure each piece is evenly coated by gently tossing them in a bowl. This step enhances the flavor of the beef and helps to create a savory crust during browning.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides, turning occasionally, until each piece develops a deep, rich color. This should take about 5-7 minutes per batch, and the beef should have a caramelized exterior.
  3. While the beef is browning, peel and slice 2 carrots into rounds and finely chop 1 onion. Once the beef is browned, remove it from the pot and set it aside on a plate. Add the chopped onion to the same pot, using the remaining oil and beef drippings to sauté them.
  4. Cook the onions over medium heat until they become translucent and slightly golden, which should take about 5 minutes. Add the sliced carrots to the pot and continue to cook for another 3 minutes, stirring occasionally to prevent sticking. The vegetables should start to soften and release their natural sweetness.
  5. Return the browned beef cubes to the pot with the vegetables. Pour in 500 ml of water, ensuring the beef and vegetables are just submerged. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid and allow the beef to braise slowly for about 1.5 to 2 hours, or until the beef is tender and easily pierced with a fork.
  6. Once the beef is tender, taste the broth and adjust the seasoning with additional salt and black pepper if necessary. The broth should be rich and flavorful, with the beef and vegetables fully infused with the savory liquid.
