Method

  1. Begin by placing the 800 g of beef cubes in a large mixing bowl. Sprinkle with 1 tsp of cumin, fine sea salt, and black pepper to taste. Use your hands to mix thoroughly, ensuring each piece is evenly coated with the spices. This step infuses the meat with flavor, crucial for the depth of taste in the final dish.
  2. Peel and finely chop 1 onion. In a large skillet, heat 2 tbsp of oil over medium-high heat. Once the oil shimmers, add the chopped onion and sauté until it becomes translucent and fragrant, stirring occasionally to prevent burning.
  3. Add the seasoned beef cubes to the skillet with the onions. Spread them out in a single layer to ensure even browning. Cook the beef, turning occasionally, until each piece develops a deep brown crust. This caramelization adds a rich, savory flavor to the skewers.
  4. If using a grill, preheat it to medium-high. Thread the browned beef cubes onto skewers, leaving a little space between each piece for even cooking. Place the skewers on the grill, turning occasionally, until the beef is tender and cooked to your desired level of doneness. If braising, transfer the beef and onions to a pot, add a splash of water, cover, and simmer on low heat until tender.
  5. Once the beef is cooked through and tender, taste a piece and adjust the seasoning with more salt and pepper if needed. The beef should be juicy and flavorful, with a slight char from the grill or a rich, savory depth from the braising.
