Eastern European Beef Skewers

Eastern European Beef Skewers

Eastern European Beef Skewers find their roots in the comfort of home kitchens across the region, where family cooks transform simple ingredients into satisfying meals. These skewers are usually prepared for casual gatherings or weekend lunches, when the focus is on shared enjoyment rather than formality. Hand-judged salt and a generous hand with fat underscore the intimate, home-cooked nature of the dish.

The skewers offer a robust and savory experience, where tender beef cubes are highlighted by the earthy warmth of cumin and the sweetness of grilled onions. Each bite is seasoned with fine sea salt and black pepper, creating a balanced and flavorful mouthful that invites generous servings and informal table settings.

Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers
  • to tastefine sea salt and black pepper

Method

  1. Begin by placing the 800 g of beef cubes in a large mixing bowl. Sprinkle them with a generous amount of fine sea salt and freshly ground black pepper. Add 1 tsp of cumin, ensuring each piece is well-coated with the spices. Use your hands to mix everything thoroughly, massaging the spices into the meat to enhance flavor absorption.
  2. Peel and finely chop 1 onion. In a large skillet or frying pan, heat 2 tbsp of oil over medium-high heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and slightly golden, releasing its sweet aroma.
  3. Increase the heat to high and add the seasoned beef cubes to the pan in a single layer. Allow them to brown without stirring for a few minutes, ensuring each piece develops a deep, rich color on one side. Turn the cubes to brown all sides evenly, working in batches if necessary to avoid overcrowding the pan.
  4. Once the beef is well-browned, you have the option to either braise or grill the skewers. For braising, transfer the beef and onions to a pot, add a small amount of water or broth, cover, and simmer on low heat until the meat is tender. Alternatively, thread the beef onto skewers and grill over medium heat, turning occasionally, until the meat is cooked through and tender.
  5. As the beef approaches doneness, taste a piece to check for seasoning. Adjust with more salt or pepper if needed, ensuring the flavors are balanced and to your liking.
  6. Serve the Eastern European Beef Skewers hot, accompanied by rice, bread, or a fresh salad. Arrange them on a platter for a communal dining experience, inviting everyone to share and enjoy the meal together.
