Eastern European Chicken Roast 3

Eastern European Chicken Roast 3 is a staple at home tables across Eastern Europe, especially on weekends when families gather for a hearty meal. This dish is traditionally prepared with a whole chicken, generously seasoned and roasted alongside potatoes, creating a comforting and communal dining experience. It's a recipe that has been passed down through generations, capturing the essence of home cooking.

The flavor of this roast is a delightful balance of savory and aromatic, with the paprika lending a mild warmth while the lemon adds a touch of brightness. The chicken emerges tender and juicy, its skin crisped to perfection, while the potatoes soak up the savory juices, turning golden and flavorful. Ingredients

  • 1whole chicken

Method

  1. Preheat your oven to 200°C (390°F). Begin by patting the whole chicken dry with paper towels to remove excess moisture, which helps in achieving a crispy skin. Season the chicken generously with fine sea salt, black pepper, and 1 teaspoon of paprika, ensuring even coverage over the entire surface and inside the cavity.
  2. In a large oven-safe skillet or roasting pan, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, carefully place the chicken breast-side down in the pan. Allow it to brown for about 5 minutes, turning it occasionally to ensure all sides develop a golden-brown crust. This step locks in the flavors and adds a rich color to the final dish.
  3. While the chicken is browning, wash and peel 1 kg of potatoes. Cut them into even-sized chunks, about 2-3 cm each, to ensure they cook evenly. Once the chicken is browned, remove it from the pan and set it aside temporarily.
  4. Add the potato chunks to the same pan, tossing them in the remaining oil and chicken drippings. Season them lightly with salt and pepper. Squeeze the juice of half a lemon over the potatoes, and place the other half inside the chicken cavity for additional flavor.
  5. Nestle the browned chicken back into the pan, breast-side up, on top of the potatoes. Transfer the pan to the preheated oven. Roast for about 45 minutes to 1 hour, or until the chicken's juices run clear when pierced at the thickest part of the thigh and the potatoes are tender and golden.
  6. Once cooked, carefully remove the pan from the oven. If there is excess liquid in the pan, transfer the chicken and potatoes to a serving platter and place the pan on the stove over medium heat to reduce the sauce. Taste and adjust the seasoning with additional salt if necessary.
  7. Finish the dish by sprinkling freshly chopped herbs, such as parsley or dill, over the chicken and potatoes for a burst of freshness. Serve the Eastern European Chicken Roast family-style, allowing everyone to enjoy the communal experience typical of Eastern European dining.
