Ingredients

  • 700 gchicken thighs

Method

  1. Begin by patting the 700 g of chicken thighs dry with paper towels. Season them generously with fine sea salt and freshly ground black pepper on all sides. Heat 2 tablespoons of oil in a large, heavy-bottomed skillet over medium-high heat. Once the oil shimmers, place the chicken thighs in the pan, skin-side down if they have skin, and brown them for about 5-7 minutes on each side until they develop a deep golden color and the skin is crisp.
  2. While the chicken is browning, peel and finely chop 1 onion. Core and slice 2 peppers into thin strips. Once the chicken is browned, remove it from the skillet and set it aside on a plate. In the same skillet, add the chopped onion and sliced peppers, stirring them in the remaining oil and chicken drippings.
  3. Cook the onions and peppers over medium heat, stirring occasionally, until the onions are translucent and the peppers are tender, about 5-7 minutes. The vegetables should be soft and fragrant, absorbing the flavors from the chicken drippings. If the pan looks dry, add a small splash of water to help deglaze and lift any browned bits from the bottom.
  4. Return the browned chicken thighs to the skillet, nestling them among the softened vegetables. Cover the skillet with a lid and reduce the heat to low. Allow the chicken to simmer gently in its juices for about 15 minutes, or until the chicken is cooked through and tender. The meat should be easy to pull apart with a fork, and the internal temperature should reach 75°C (165°F).
  5. If the sauce seems too watery, remove the lid and increase the heat to medium-high, allowing the liquid to reduce slightly. Taste the sauce and adjust the seasoning with more salt and pepper if needed. The sauce should have a rich, concentrated flavor that complements the chicken and vegetables.
  6. Finish the dish by sprinkling freshly chopped herbs, such as parsley or dill, over the top before serving. This adds a fresh, vibrant note to the rich flavors of the sauté.
