Eastern European Chicken Sauté

Ingredients

  • 700 gchicken thighs
  • 1onion
  • 2peppers
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Start by patting the 700 g of chicken thighs dry with paper towels to remove excess moisture. This helps them brown better. Season the chicken generously with fine sea salt and black pepper on both sides. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Once the oil shimmers, add the chicken thighs skin-side down. Cook until the skin is golden brown and releases easily from the pan, about 5-7 minutes. Flip and brown the other side for another 3-4 minutes. Remove the chicken from the pan and set aside.
  2. While the chicken rests, prepare your aromatics. Slice 1 onion and 2 peppers into thin strips. In the same skillet, with the remaining oil and chicken drippings, add the sliced onion and peppers. Sauté over medium heat, stirring frequently, until the onions are translucent and the peppers have softened, about 5-7 minutes. The vegetables should be tender and fragrant, absorbing the flavors from the chicken.
  3. Return the chicken thighs to the skillet, nestling them among the cooked vegetables. If there is any accumulated juice from the chicken, add that to the pan as well. Cover the skillet with a lid and reduce the heat to low. Allow the chicken to cook through, absorbing the flavors of the onions and peppers, until the internal temperature reaches 75°C (165°F) and the meat is tender.
  4. If the sauce in the pan seems too thin, remove the lid and increase the heat to medium. Let it simmer gently until it reduces slightly, thickening and intensifying in flavor. Taste the sauce and adjust the seasoning with more fine sea salt and black pepper if needed. The sauce should have a balanced taste, complementing the chicken and vegetables.
  5. Finish the dish by sprinkling freshly chopped herbs, such as parsley or dill, over the chicken and vegetables. This adds a fresh, vibrant note to the dish. Serve the Eastern European Chicken Sauté hot, straight from the skillet, allowing everyone to help themselves at the table.
