  1. Begin by preparing your ingredients: finely chop 1 onion and 2 tomatoes. Drain and rinse 400 g of chickpeas under cold water. This ensures any excess salt or preservatives are washed away, giving you a fresh base to work with. Set these aside as you will need them shortly.
  2. In a large, heavy-bottomed pot or deep skillet, heat 2 tbsp of oil over medium heat. Add the chopped onion and cook gently, stirring occasionally. The goal is to soften the onion until it becomes translucent and slightly golden, which should take about 5-7 minutes. This slow cooking releases the onion's natural sweetness, forming a flavorful base.
