Eastern European Chickpea Curry

It's a dish that reflects the adaptability of regional cooking, with salt measured by instinct and oil poured liberally. This curry has become a staple for weeknight dinners, where families gather around a table set for sharing, finding comfort in familiar flavors with a twist.

With a base of chickpeas, this curry offers a hearty texture, complemented by the sweetness of onions and tomatoes. The cumin adds an earthy aroma, while salt and black pepper are adjusted to personal preference, ensuring each serving is as individual as the hand that seasoned it. Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing your ingredients. Dice 1 onion and 2 tomatoes into small, even pieces to ensure they cook evenly. Drain and rinse 400 g of chickpeas under cold water to remove any excess starch and preserve their texture. Measure out 1 tsp of cumin and have fine sea salt and black pepper ready for seasoning.
  2. In a large, heavy-bottomed pan, heat 2 tbsp of oil over medium heat. Once the oil is shimmering, add the diced onion. Cook the onion slowly, stirring occasionally, until it becomes translucent and soft, releasing a sweet aroma, which should take about 5-7 minutes.
  3. Add the diced tomatoes to the pan with the onions. Stir them together, allowing the tomatoes to break down and meld with the onions. This should take another 5-7 minutes, during which the mixture will become a fragrant, thick base for your curry.
  4. Sprinkle the 1 tsp of cumin into the pan, stirring well to coat the onion and tomato mixture. The cumin will release its earthy aroma as it toasts lightly in the oil. This step is crucial for infusing the dish with its characteristic flavor.
  5. Add the drained chickpeas to the pan, stirring them into the onion-tomato-cumin mixture. Ensure the chickpeas are well-coated and continue to cook for 10-15 minutes, stirring occasionally. The chickpeas should be heated through and slightly tender, absorbing the flavors of the base.
  6. Taste the curry and season with fine sea salt and black pepper to your preference. The salt should enhance the flavors without overpowering them. Adjust as needed, keeping in mind that Eastern European cooking often uses salt generously.
  7. Once seasoned to your liking, remove the pan from the heat. The curry should have a cohesive texture, with the chickpeas soft but not mushy, and the sauce thick enough to coat them. Serve immediately, ideally with a side of crusty bread or over rice, to soak up the delicious sauce.
