Ingredients

  • 2whole fish

Method

  1. Rinse the 2 whole fish under cold running water to remove any scales or impurities. Pat them dry thoroughly with paper towels, ensuring the skin is completely dry to achieve a nice crisp texture when grilled.
  2. In a large skillet or grill pan, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add a few sprigs of your chosen herbs, such as dill or parsley, to infuse the oil with their aroma. This will create a fragrant base that complements the fish.
  3. Season the fish inside and out with fine sea salt and black pepper to taste. Place the fish in the hot pan, ensuring they are not overcrowded. Cook the fish for about 3-4 minutes on each side, or until the skin is golden brown and the flesh is just opaque and flakes easily with a fork.
  4. Once cooked, remove the fish from the pan and transfer them to a serving platter. Squeeze fresh lemon juice over the top to add a bright, tangy flavor that balances the richness of the fish.
