  2. In a large heavy-bottomed skillet, heat 2 tablespoons of oil over medium-high heat until it shimmers. Carefully place the seasoned lamb chops in the skillet, making sure not to overcrowd the pan. Sear each chop for about 3-4 minutes on one side until a deep brown crust forms.

  6. Taste a small piece of lamb for seasoning. Add more fine sea salt and black pepper if needed, adjusting to your preference.
  7. Transfer the lamb chops to a serving platter. Finish with a squeeze of lemon over the top to add brightness and balance the richness of the meat. Serve immediately with rice, bread, or a fresh salad for a complete meal.
