Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin

Method

  1. Begin by rinsing 300 g of brown lentils under cold water until the water runs clear. This removes any dust or debris and ensures a clean taste. Set them aside to drain while you prepare the other ingredients.
  2. Dice 1 onion finely and chop 2 tomatoes into small cubes. This uniform size helps them cook evenly and blend into the dish seamlessly. Season the chopped tomatoes with a pinch of fine sea salt and black pepper to enhance their natural flavors.
  3. In a large saucepan or pot, heat 2 tbsp of oil over medium heat. Once the oil is shimmering, add the diced onion. Cook slowly, stirring occasionally, until the onion becomes translucent and soft, releasing a sweet aroma. This should take about 5 to 7 minutes, but focus on the texture and aroma rather than the time.
  4. Add 1 tsp of cumin to the softened onions, stirring continuously for about 1 minute until the cumin becomes fragrant. This step blooms the spice, releasing its full flavor into the oil and onions.
  5. Introduce the seasoned tomatoes to the pot, stirring them into the onion and cumin mixture. Allow the tomatoes to cook down until they start to break apart and meld with the onions, creating a thick, aromatic base. This should take about 5 minutes, and you'll notice the tomatoes releasing their juices and deepening in color.
  6. Add the rinsed lentils to the pot, stirring well to coat them with the flavorful base. Pour in enough water to cover the lentils by about 2 cm. Increase the heat to bring the mixture to a gentle simmer.
  7. Reduce the heat to low and cover the pot, allowing the lentils to cook slowly. Stir occasionally, checking the lentils' texture. They should be tender but still hold their shape, which typically takes about 20 to 30 minutes. Adjust with more water if necessary to maintain a stew-like consistency.
  8. Once the lentils are cooked to your desired tenderness, taste and adjust the seasoning with additional fine sea salt and black pepper if needed. The dish should be well-seasoned, with the warmth of cumin and the sweetness of onions coming through.
  9. Serve the Eastern European Lentil Bowl warm, ideally with crusty bread or a side of pickles for a traditional touch. This dish is meant to be shared, embodying the communal spirit of Eastern European home cooking.
