Eastern European Lentil Bowl

In the heart of Eastern European homes, the Lentil Bowl is a staple, often gracing tables during the cooler months when warmth and comfort are most needed. Cooked with a generous hand, this dish is a reflection of the home cook's intuition, where salt is measured by feel and the oil flows liberally, ensuring each bite is as satisfying as the last.

Expect a hearty blend of tender brown lentils and softened onions, with tomatoes adding a slight tang. The gentle warmth of cumin rounds out the flavors, while a touch of freshly ground black pepper adds depth. Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Rinse 300 g of brown lentils under cold running water until the water runs clear to remove any dust or debris. Dice 1 onion finely and chop 2 tomatoes into small cubes. Set these aside, as they will be used shortly.
  2. In a large pot, heat 2 tbsp of oil over medium heat. Add the diced onion and cook, stirring occasionally, until the onion becomes translucent and soft, about 5-7 minutes. This slow cooking helps to release the onion's sweetness, which forms the base flavor.
  3. Add 1 tsp of cumin to the softened onion and stir for about 1 minute, until the cumin becomes fragrant. This step blooms the spice, enhancing its earthy flavor.
  4. Add the rinsed lentils and chopped tomatoes to the pot. Stir well to combine all the ingredients, ensuring the lentils are coated with the onion and cumin mixture.
  5. Pour in enough water to cover the lentils by about 2 cm. Increase the heat to bring the mixture to a gentle simmer. Once simmering, reduce the heat to low and cover the pot with a lid, allowing the lentils to cook slowly. Stir occasionally to prevent sticking.
  6. Cook the lentils until they are tender but not mushy, which should take about 25-30 minutes. The lentils should hold their shape but be easy to bite through, and the tomatoes should have broken down into a thick sauce.
  7. Once the lentils are cooked to the desired texture, taste the dish and season with fine sea salt and black pepper to your liking. Stir well to ensure the seasoning is evenly distributed.
  8. Serve the Eastern European Lentil Bowl warm, ideally with a side of crusty bread or a simple salad. This dish is meant to be shared at the table, embodying the communal spirit of Eastern European home cooking.
