Ingredients

  • 700 gground beef
  • 1onion
  • 1egg
  • 2 tbspbreadcrumbs
  • 2tomatoes

Method

  1. Start by finely chopping 1 onion. In a large mixing bowl, combine 700 g ground beef with the chopped onion, 1 egg, and 2 tablespoons of breadcrumbs. Season the mixture with fine sea salt and black pepper to taste, ensuring even distribution by mixing with your hands until the ingredients are well incorporated.
  2. Shape the mixture into meatballs, each about the size of a golf ball. This size ensures they cook evenly and remain juicy. Set the formed meatballs aside on a plate.
  3. Heat a large, heavy-bottomed skillet over medium-high heat and add a generous amount of oil to coat the bottom. Once the oil shimmers, carefully add the meatballs in a single layer, ensuring they are not overcrowded. Brown the meatballs on all sides, turning them gently with tongs. Look for a deep golden-brown crust, which adds flavor and texture.
  4. While the meatballs are browning, dice 2 tomatoes. Once the meatballs are browned, remove them from the skillet and set them aside. In the same skillet, add the diced tomatoes, using the moisture to deglaze the pan and scrape up any browned bits from the bottom.
  5. Return the meatballs to the skillet with the tomatoes. Lower the heat to medium, cover the skillet, and allow the meatballs to braise in the tomato juices. Cook until the meatballs are tender and the tomatoes have broken down into a sauce, which should take on a rich, slightly thickened consistency.
  6. Taste the sauce and adjust the seasoning with more salt and black pepper if necessary. Serve the meatballs hot, accompanied by rice, bread, or a fresh salad, inviting everyone to share in this comforting Eastern European dish.
