  1. Begin by ensuring the 600 g of squid rings are thoroughly cleaned and patted dry. This step is crucial to prevent excess moisture, which can lead to steaming rather than stir-frying, affecting the texture of the squid.
  2. In a large, heavy-bottomed skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, add 4 cloves of garlic, finely chopped, and a pinch of chili to taste. Stir continuously for about 30 seconds until the garlic becomes fragrant and slightly golden, releasing its aroma into the oil.
  3. Add the squid rings to the skillet in a single layer, ensuring they are not overcrowded. Stir-fry them briskly for about 2 to 3 minutes. You will know they are cooked when they turn from translucent to opaque and curl slightly at the edges, indicating they are tender and ready.
  4. Remove the skillet from the heat and immediately squeeze the juice of one lemon over the squid. This will add a bright, fresh flavor that complements the richness of the garlic and chili.
