Eastern European Squid Stir-Fry

Eastern European Squid Stir-Fry is a dish that brings the sea to the landlocked tables of Eastern Europe. It's a straightforward, flavorful meal that relies on a few key ingredients to shine. Squid rings are the star, cooked with garlic and a touch of chili for a hint of heat. A generous squeeze of lemon brightens the dish, while a careful hand with salt ensures the flavors are balanced.

This stir-fry is a reflection of how Eastern European families bring seafood into their homes, despite the region's distance from the ocean. The use of oil and garlic is typical, creating a rich base that complements the squid's natural sweetness. It's a dish meant for sharing, embodying the communal spirit of Eastern European dining, where simplicity and taste go hand in hand.

Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic
  • 2 tbspoil
  • to tastechili
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Begin by ensuring the 600 g of squid rings are thoroughly cleaned and patted dry with a kitchen towel. This step is crucial to prevent excess moisture from interfering with the stir-frying process, which could lead to steaming rather than frying.
  2. In a large, heavy-bottomed skillet or wok, heat 2 tablespoons of oil over medium-high heat. The oil should be shimmering but not smoking, which indicates it's ready for the aromatics.
  3. Finely mince 4 cloves of garlic and add them to the hot oil. Stir continuously for about 1 minute until the garlic becomes fragrant and just starts to turn golden. This releases the garlic's essential oils, creating a flavorful base for the dish.
  4. Add the squid rings to the skillet, spreading them out in a single layer for even cooking. Stir-fry the squid for about 2 to 3 minutes, or until they turn opaque and firm. This change indicates that the squid is cooked through but still tender.
  5. Season the squid with a pinch of fine sea salt and a sprinkle of chili to taste. The amount of chili can be adjusted based on your preference for heat. Stir everything together to ensure the seasonings are evenly distributed.
  6. Squeeze the juice of one lemon over the stir-fried squid, tossing it quickly to combine. The acidity from the lemon juice brightens the flavors and balances the richness of the dish.
  7. Taste the stir-fry and adjust the salt if necessary, keeping in mind that the dish should be well-seasoned but not overly salty. Serve the Eastern European Squid Stir-Fry immediately while it's hot, allowing the vibrant flavors to be enjoyed at their peak.
