Eastern European Stuffed Peppers

Eastern European Stuffed Peppers are a beloved staple across many home tables in Eastern Europe. This dish is a comforting blend of bell peppers filled with a savory mixture of rice, onion, and herbs, all bound together with a generous splash of olive oil. The seasoning is intuitive, with salt and black pepper added to taste, reflecting the home cook's personal touch.

Ingredients

  • 200 grice
  • 1onion
  • 80 mlolive oil

Method

  1. Begin by washing 6 bell peppers thoroughly under cold water. Slice off the tops and remove the seeds and membranes inside, creating a hollow space for stuffing. Set the prepared peppers aside on a large plate. Rinse 200 g of rice under cold water until the water runs clear, then drain it well.
  2. Dice 1 onion finely. In a large skillet or saucepan, heat 80 ml of olive oil over medium heat. Add the diced onion to the pan and cook slowly, stirring occasionally, until the onion becomes translucent and soft, about 5 to 7 minutes. This slow cooking allows the onion to release its sweetness, which will enhance the flavor of the stuffing.
  3. Add the drained rice to the pan with the softened onions. Stir well to coat the rice with the oil and onion mixture. Season with fine sea salt and black pepper to taste, and add your choice of herbs, such as parsley or dill, finely chopped. Continue to cook for another 2 to 3 minutes, allowing the rice to absorb the flavors.
  4. Carefully stuff each prepared bell pepper with the rice and onion mixture, pressing down gently to fill them completely but not too tightly, as the rice will expand during cooking. Arrange the stuffed peppers upright in a deep baking dish or a large pot that can fit them snugly.
  5. Pour enough water into the dish or pot to come about halfway up the sides of the peppers. Cover the dish with a lid or aluminum foil to trap steam, which will help cook the rice inside the peppers. Place the dish in a preheated oven at 180°C (350°F) or on the stovetop over low heat.
  6. Cook the peppers until the rice is tender and fully cooked, which you can check by tasting a small spoonful from the top of one pepper. The peppers themselves should be soft but still hold their shape, and the aroma should be rich and inviting, signaling that the dish is ready.
  7. Once cooked, remove the dish from the oven or stovetop. Taste the rice filling for salt and adjust if necessary. Allow the peppers to cool slightly before serving, so the flavors can meld together. Serve the stuffed peppers warm, ideally with a side of sour cream or a fresh salad, and enjoy this comforting Eastern European dish with family and friends.
