Eastern European Vegetable Bake

Eastern European Vegetable Bake is a dish that graces the table during late summer when gardens are brimming with eggplant, zucchini, and tomatoes. It's the kind of recipe that has been passed down through generations, each cook adding their own touch. The dish is often prepared in anticipation of a family meal, embodying the essence of home cooking — generous, welcoming, and shared.

The bake should emerge from the oven with a medley of tender vegetables, infused with olive oil and herbs, each bite a balance of earthiness and brightness. The eggplant becomes silky, the zucchini soft yet structured, and the tomatoes burst with juiciness, all harmonized by a subtle hint of salt and pepper.

Ingredients

  • 2zucchini
  • 2tomatoes
  • 80 mlolive oil

Method

  1. Begin by washing and drying 1 eggplant, 2 zucchini, and 2 tomatoes. Slice the eggplant and zucchini into 1/4-inch thick rounds, and the tomatoes into slightly thicker slices to maintain their structure during cooking. Lay the slices on a large tray, sprinkle them generously with fine sea salt, and let them sit for about 15 minutes. This will draw out excess moisture and any bitterness from the eggplant.
  2. While the vegetables are resting, finely chop one medium onion. Heat 40 ml of olive oil in a large, heavy-bottomed skillet over medium heat. Add the chopped onion and cook slowly, stirring occasionally, until the onion becomes translucent and soft, releasing a sweet aroma.
  3. Rinse the salted eggplant and zucchini slices under cold water to remove excess salt, then pat them dry with a clean kitchen towel. Increase the heat to medium-high and add the eggplant slices to the skillet with the onions. Cook until the eggplant starts to soften and takes on a golden hue, about 5 minutes, then add the zucchini slices.
  4. Once the zucchini begins to soften, layer the tomato slices on top of the vegetables in the skillet. Drizzle the remaining 40 ml of olive oil over the top. Sprinkle with your choice of herbs such as dill, parsley, or thyme, and season with black pepper to taste. Cover the skillet with a lid and reduce the heat to low, allowing the vegetables to steam and meld together.
  5. Cook the vegetable bake for about 15 minutes, or until the tomatoes have softened and the flavors have melded. The dish should have a harmonious aroma, and the vegetables should be tender but not mushy, with the eggplant and zucchini maintaining their shape.
  6. Remove the lid and taste the dish, adjusting the salt if necessary. The vegetables should be well-seasoned, with the olive oil adding richness. Serve the Eastern European Vegetable Bake warm, allowing the flavors to be enjoyed as a shared dish at the table.
