Et Sote

Serves 4 to 6 Entree meat

Et Sote

Et Sote, a staple of Turkish lokantas, finds its way onto home tables with a touch of familial warmth. Traditionally, it graces the table for any meal where sharing is encouraged, from casual weeknight dinners to more leisurely weekend gatherings. This version captures the essence of lokanta cooking—generous with fat and salt judged by hand, bringing the bustling counter experience into the home kitchen.

This dish offers a tender embrace of beef strips, enveloped in the sweetness of softened peppers and tomatoes, with the onion lending its aromatic depth. The butter enriches each bite, while fine sea salt and black pepper punctuate with just the right amount of seasoning. Savored best when shared, Et Sote invites conversation and connection over its hearty, comforting flavors.

Ingredients

  • 700 gbeef strips
  • 2peppers
  • 2tomatoes
  • 1onion
  • 2 tbspbutter
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning 700 g of beef strips with fine sea salt and freshly ground black pepper. Use your hands to ensure the seasoning is evenly distributed across all the pieces. This step enhances the flavor of the meat, allowing the salt to penetrate and tenderize it slightly.
  2. Heat a large, heavy-bottomed skillet over medium-high heat. Add 2 tablespoons of butter to the pan and allow it to melt completely. Once the butter is sizzling, add the seasoned beef strips in a single layer, ensuring not to overcrowd the pan. Let them brown undisturbed for a few minutes until they develop a deep, golden-brown crust on one side. Turn the strips to brown the other side, ensuring that each piece is well-seared.
  3. While the beef is browning, prepare the vegetables. Slice 2 peppers and 1 onion into thin strips, and dice 2 tomatoes. Once the beef is browned, remove it from the pan and set aside. In the same skillet, add the sliced onions and peppers, using the residual butter and beef drippings to cook them. Stir occasionally until the onions become translucent and the peppers soften, releasing a sweet aroma.
  4. Add the diced tomatoes to the skillet with the softened onions and peppers. Stir to combine, allowing the tomatoes to break down slightly and release their juices. This will create a flavorful base for the beef.
  5. Return the browned beef strips to the skillet, nestling them among the vegetables. Reduce the heat to medium and cover the pan with a lid. Allow the mixture to braise gently, stirring occasionally, until the beef is tender and the flavors meld together. The dish is ready when the beef is tender to the bite and the sauce has thickened slightly, coating the meat and vegetables.
  6. Taste the dish and adjust the seasoning with additional fine sea salt and black pepper if necessary. Serve the Et Sote hot, accompanied by rice, fresh bread, or a simple salad, allowing everyone to share and enjoy this comforting Turkish meal.
