Ingredients

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and freshly ground black pepper. Make sure each piece is evenly coated to enhance the flavor throughout the meat. Set aside to allow the seasoning to penetrate while you prepare the vegetables.
  2. Peel and slice 2 carrots into thick rounds, ensuring they are uniform for even cooking. Dice 1 onion into small pieces. These vegetables will add sweetness and depth to the dish.
  3. In a large, heavy-bottomed pot, heat 2 tbsp of oil over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides, turning occasionally, until each piece has a deep, caramelized color. This step develops a rich flavor base for the dish.
  4. Remove the browned beef from the pot and set aside. In the same pot, add the diced onion and sauté until it becomes translucent and fragrant, using the oil and beef drippings to add flavor. Stir in the carrot rounds and cook for another 2-3 minutes until they start to soften slightly.
  5. Return the browned beef cubes to the pot with the vegetables. Pour in 500 ml of water, ensuring the beef is mostly submerged. Bring the mixture to a gentle simmer over medium heat.
  6. Reduce the heat to low, cover the pot, and let the beef braise slowly. Cook until the beef is tender and can be easily pierced with a fork, which should take about 1.5 to 2 hours. Stir occasionally and check the liquid level, adding a bit more water if necessary to keep the beef moist.
  7. Once the beef is tender, taste the broth and adjust the seasoning with more salt and pepper if needed. The dish should have a savory depth with a hint of sweetness from the carrots. Serve hot with steamed rice, crusty bread, or a fresh salad, allowing everyone to share and enjoy this hearty meal.
