Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater

Method

  1. Start by seasoning 800 g of beef cubes with fine sea salt and black pepper to taste. Make sure each piece is evenly coated, which helps enhance the flavor of the beef during cooking.
  2. Heat 2 tbsp of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in batches, ensuring not to overcrowd the pot. Brown each piece on all sides until a deep, rich color develops, which should take about 3-4 minutes per side. This step is crucial for building flavor.
  3. While the beef is browning, peel and slice 2 carrots into thick rounds and chop 1 onion into medium-sized pieces. Once the beef is browned, remove it from the pot and set aside on a plate.
  4. In the same pot, add the chopped onion and cook over medium heat, stirring occasionally, until the onion becomes translucent and starts to caramelize, which will take about 5 minutes. This will add sweetness and depth to the dish.
  5. Add the sliced carrots to the pot with the onions and stir well, allowing the carrots to slightly soften and absorb the flavors from the pot for about 2 minutes.
  6. Return the browned beef cubes to the pot, along with any accumulated juices on the plate. Pour in 500 ml of water, ensuring the beef is mostly submerged. Bring the mixture to a gentle simmer, then reduce the heat to low and cover the pot.
  7. Allow the beef to braise on low heat for about 1.5 to 2 hours, or until the meat is tender and easily pierced with a fork. The liquid should reduce slightly, creating a flavorful sauce that coats the beef and vegetables.
  8. Taste the dish and adjust the seasoning with more salt and black pepper if needed. Serve the Filipino Beef Pot 3 hot, accompanied by steamed rice, crusty bread, or a fresh salad for a complete meal.
