Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning 800 g of beef cubes generously with fine sea salt and freshly ground black pepper. Toss the cubes in a large bowl to ensure each piece is evenly coated. This step enhances the beef's flavor and helps form a savory crust during browning.
  2. Heat 2 tbsp of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides until a deep, rich color develops, which should take about 3-4 minutes per side. This step builds the foundation of flavor for the dish.
  3. While the beef is browning, peel and slice 2 carrots into thick rounds, and finely chop 1 onion. Once the beef is browned, remove it from the pot and set aside on a plate. In the same pot, add the chopped onion and carrot slices, using the residual oil and beef drippings to sauté them.
  4. Sauté the onions and carrots over medium heat until the onions become translucent and the carrots start to soften, about 5 minutes. This step allows the vegetables to absorb the flavors left in the pot, adding depth to the dish.
  5. Return the browned beef cubes to the pot with the sautéed vegetables. Pour in 500 ml of water, scraping the bottom of the pot with a wooden spoon to release any browned bits stuck to the bottom. These bits are full of flavor and will enrich the broth.
  6. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid and let it braise for about 1.5 to 2 hours, or until the beef is tender. The beef should be easy to pierce with a fork, and the broth should have a rich, beefy aroma.
