Ingredients

  • 800 gbeef cubes
  • 1onion

Method

  1. Start by seasoning 800 g of beef cubes with fine sea salt and black pepper to taste. Add 1 tsp of cumin to the mix, ensuring each piece is evenly coated with the spices. This step enhances the flavor and tenderizes the meat slightly, so take your time to massage the spices into the beef.
  2. Peel and finely chop 1 onion. In a large skillet, heat 2 tbsp of oil over medium-high heat until it shimmers. Add the chopped onion and sauté until it becomes translucent and fragrant, about 2-3 minutes. This will infuse the oil with a rich onion flavor.
  3. Increase the heat to high and add the seasoned beef cubes to the skillet. Spread them out in a single layer, ensuring each piece has contact with the hot surface. Let them brown without moving for about 2-3 minutes until a deep, caramelized crust forms on one side.
  4. Turn the beef cubes to brown the other sides, continuing until all sides are deeply colored. This browning process is crucial as it develops the savory flavors and seals in the juices.
  5. If using a grill, preheat it to medium-high. Thread the browned beef cubes onto skewers, leaving a small gap between each piece for even cooking. Grill the skewers, turning occasionally, until the beef is tender and cooked through, with a slightly charred exterior.
  6. Alternatively, if braising, reduce the skillet heat to low, cover, and let the beef simmer gently in its own juices until tender. This should take about 20-30 minutes, and the beef should be easy to pierce with a fork.
  7. Taste a piece of beef and adjust the seasoning with more salt if necessary. The beef should be flavorful and tender, with a hint of cumin. Serve the skewers hot, accompanied by rice, bread, or a fresh salad for a complete meal.
