Filipino Beef Skewers 3

Filipino Beef Skewers 3 captures the essence of home-cooked Filipino meals, a beloved dish often found gracing family tables across the Philippines during casual gatherings or weekend feasts. This recipe is not about precise measurements but rather the intuitive cooking that Filipino home cooks excel at—salt is measured by the eyes and hands, and the richness of beef fat is embraced rather than trimmed away.

The skewers are a celebration of simplicity and flavor, with tender beef cubes marinated with the warmth of cumin and the sweetness of onions. As you bite into the juicy, charred meat, the subtle seasoning of fine sea salt and black pepper highlights the beef's natural richness, creating a dish that's both comforting and irresistibly satisfying.

Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers
  • to tastefine sea salt and black pepper

Method

  1. Begin by placing the 800 g beef cubes in a large mixing bowl. Season them generously with fine sea salt and freshly ground black pepper to taste. Add 1 tsp cumin to the bowl, ensuring the spices evenly coat each piece of beef. Mix well using your hands or a spoon, making sure the seasoning is well distributed throughout the meat.
  2. Peel and finely chop 1 onion. Heat 2 tbsp oil in a large skillet or grill pan over medium-high heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and fragrant, about 2-3 minutes.
  3. Add the seasoned beef cubes to the pan in a single layer, ensuring they do not overcrowd the pan. This will help each piece brown evenly. Allow the beef to brown on one side without moving them for about 3-4 minutes, or until a deep brown crust forms. Turn the cubes to brown the other sides, continuing until all sides are deeply colored.
  4. If using a grill, preheat it to medium-high heat. Thread the browned beef cubes onto skewers, leaving a small space between each piece to allow for even cooking. Place the skewers on the grill and cook, turning occasionally, until the beef is tender and cooked through. The beef should feel firm to the touch and have a slightly charred exterior.
  5. Taste a piece of beef for seasoning. Adjust with additional salt if necessary. Serve the Filipino Beef Skewers 3 hot, accompanied by steamed rice, crusty bread, or a fresh salad, ensuring the table is set for sharing.
