Filipino Beef Skewers

Filipino Beef Skewers are a staple at home tables, where meals are often a communal affair. This dish, grounded in its simplicity, is prepared with a generous hand and a keen eye for balance. Each piece of beef is cut into cubes, seasoned with a fragrant blend of cumin, salt, and pepper, and threaded onto skewers, ready to be grilled to perfection. It captures the essence of everyday Filipino cooking—unfussy and meant for sharing.

As you bite into these skewers, expect tender beef, with each morsel carrying a gentle whisper of cumin and the savory depth of caramelized onions. The skewers are a celebration of texture and flavor, a dish where the richness of the beef is front and center, complemented by just the right touch of seasoning. This is Filipino home cooking at its most inviting.

Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers
  • to tastefine sea salt and black pepper

Method

  1. Begin by placing the 800 g beef cubes in a large mixing bowl. Season the meat generously with fine sea salt and freshly ground black pepper. Add 1 tsp cumin to the bowl, ensuring each piece of beef is well-coated with the spices. Use your hands to mix everything thoroughly, allowing the flavors to penetrate the meat.
  2. Peel and finely chop 1 onion. In a large skillet or grill pan, heat 2 tbsp oil over medium-high heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and fragrant, which should take about 2-3 minutes.
  3. Add the seasoned beef cubes to the pan in a single layer, ensuring they are not overcrowded. Allow them to brown without moving them for about 3-4 minutes. This will help develop a deep, rich color on the outside of the meat.
  4. Turn the beef cubes to brown the other sides. Continue cooking until all sides are evenly browned and a crust has formed. The beef should have a deep brown color and a slightly crispy texture on the edges.
  5. If using a grill, preheat it to medium-high heat. Thread the browned beef cubes onto skewers, leaving a little space between each piece to ensure even cooking. Place the skewers on the grill and cook, turning occasionally, until the beef is tender and cooked to your desired level of doneness. The meat should feel firm but not hard when pressed.
  6. Once the beef skewers are cooked, remove them from the grill or pan. Taste a piece for seasoning and adjust with more salt if needed. Serve the skewers hot, accompanied by rice, bread, or a fresh salad, ready to share at the table.
